You open the fridge with a heavy heart. A few random vegetables stare back at you. How will you ever turn these ingredients into something healthy, tasty and fun, that your whole family will enjoy? Well, that’s where Buddha bowls come in.
The trick to a delicious and filling Buddha bowl lies simply in getting the balance of ingredients right. You’ll need some raw and/or cooked veg (whatever you’ve got in the fridge is fine!), a grain and a legume (things we all usually have in our pantry) – finish off with a dressing and some crushed nuts or seeds and you’ve got a plate that will satisfy your taste buds and your tummy. Serve with purple potato chips if you want to get fancy (don’t worry, they’re super easy to make!).
One of the reasons I love Buddha bowls, aside from how easy they are to make, and how pretty they look, is the sheer amount of healthy nutrients you can pack into one meal. Chickpeas are high in fiber, which keeps your digestive system healthy, stabilizes your blood sugar, and keeps you feeling fuller longer – so you don’t have that mid-afternoon snack attack!
The healthy fats in avocado are known to keep your brain healthy and your skin beautiful. Cucumbers are high in plant polyphenols which can reduce your risk of cardiovascular disease and even certain cancers. The plant pigments that give purple potatoes and black Venus rice their distinctive color are actually powerful antioxidants which help fight free radicals and reduce oxidative stress.
